INGREDIENTS
4 cups cooked pumpkin, mashed
1 egg, beaten
5 Tablespoons bran
2 teaspoons baking powder
pinch salt
oil for frying
cinnamon sugar (mix 1 teaspoon cinnamon to 1/4 cup sugar)
Mix the pumpkin, bran, baking powder and salt to form a soft batter.
Add the egg and mix well.
Heat the oil until hot enough for frying.
Drop spoonfuls of batter in the oil and fry on both sides till golden brown.
Remove from the oil.
Sprinkle immediately with cinnamon sugar.
Serve hot or cold.
